For the last meal I cooked for Hello Fresh, I had a truly wonderful experience. This dish was my favorite of all three companies that I tried. I cannot even come up with anymore witty banter, I am going to jump right into this.

This was the recipe that they did not send me, sending a salmon cake recipe instead, but I was able to find the recipe really easily online.

IMG_0474I preheated the over to 400 and chopped the potatoes into 1 inch cubes. Obviously I was not super consistent in my chop.

When the potatoes were in the oven, I chopped the half of the apple into cubes for the compote and the other half in slices for the salad.

Then I cut half the shallots in a small chop and the other half in rings. I took the slices and coated them with flour to fry.

I was not able to take a picture during the frying process, but I basically put the floured shallots into hot oil. Here are my crispy shallots.

While my crispy shallots were draining their oil. I seared the pork chops in a little oil and heavy hand of salt and pepper on both sides.

Once the pork chops got going, I tossed the spinach with the sliced apple, balsamic  vinegar, olive oil and some salt and pepper.

Once the potatoes where nice and brown (unevenly brown), I made the compote with the chopped apples and shallots, chicken stock concentrate and water.

IMG_0490I assembled the pork chop with the compote and then the shallots. Then added my salad and potato sides. This dish was so good. I had to stop myself from eating my left overs.

Overall Ratings:

Ease of Recipe: 4 out of 5 stars. This dish is pretty easy to make but I took 1 point off for frying those shallots. Lots of shooting oil

Precision of the Recipe: 5 out of 5 stars. Everything was perfect. The cook times were spot on and the pork was just so tender. The only issue was the potato chop. I just did not make my chops very uniform.

Taste of Recipe: 5 out of 5 stars. So good. I mean, this dish was just so good. I grew up eating pork chops with apple sauce and this was just a great spin on a classic family dish.

Quality of Ingredients: 5 out of 5 stars. Everything was fresh and great. The only complaint was that the balsamic vinegar bottle was hard to open.

Final Verdict: Five out of Five stars.
